Description
Fluffy pumpkin-enriched dough wraps fresh rosemary for a tender roll that emerges from the oven with a golden crust, subtle sweetness, and herb-scented warmth that beckons you to take a bite.
Ingredients
- 1 cup warm milk
- 2 tablespoons active dry yeast
- 1/3 cup granulated sugar
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup pumpkin puree
- 3 tablespoons unsalted butter melted
- 1 large egg
- 4 cups all-purpose flour
- 2 tablespoons fresh rosemary finely chopped
- 1 large egg for egg wash
- 1 tablespoon water
Instructions
- In a small bowl combine warm milk, active dry yeast, and a pinch of sugar. Let sit until foamy, about 5 to 10 minutes.
- In a separate bowl whisk together pumpkin puree, granulated sugar, melted butter, one large egg, salt, ground cinnamon, and ground nutmeg until smooth.
- Pour the yeast mixture into the pumpkin mixture and stir to combine.
- Gradually add all-purpose flour and chopped rosemary, mixing until a soft dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a round roll and place on a parchment-lined baking sheet.
- In a small bowl whisk together the egg for egg wash and water. Brush the egg wash over the tops of the rolls.
- Cover the rolls loosely and let them rise for another 30 minutes until puffy.
- Meanwhile preheat the oven to 375°F (190°C). Bake the rolls for 15 to 18 minutes or until golden brown on top.
- Transfer the rolls to a wire rack to cool slightly before serving.
Notes
- Rolls can be brushed with melted butter immediately after baking for extra shine and flavor.
- For a more intense flavor, refrigerate the dough overnight and bake the rolls the next day.
- Sprinkle coarse sugar or additional chopped rosemary on top of the rolls before baking for added texture.
- Leftover rolls can be frozen in an airtight container and reheated in a warm oven.
