Description

Sweet banana slices are sandwiched with peanut butter, frozen crisp, then coated in glossy dark chocolate for a cool, satisfying pop of flavor in every bite.

Ingredients

  • 2 medium bananas
  • 2 tablespoons natural peanut butter
  • 100 grams dark chocolate chips
  • 1 teaspoon coconut oil
  • 1 teaspoon honey

Instructions

  1. Slice bananas into 1 cm thick rounds and place on a parchment-lined baking sheet.
  2. Spread 1 teaspoon of peanut butter on half of the banana slices.
  3. Top each peanut butter covered slice with a plain banana slice to create a sandwich.
  4. Freeze the banana sandwiches for 30 minutes until firm.
  5. Melt chocolate chips with coconut oil and honey in a microwave-safe bowl, stirring every 20 seconds until smooth.
  6. Dip each frozen banana sandwich into the melted chocolate, allowing excess to drip off.
  7. Return the coated bites to the baking sheet and freeze for an additional 15 minutes until the chocolate has set.

Notes

  • Substitute almond butter for natural peanut butter if preferred.
  • Use dark chocolate with at least 70% cocoa for lower sugar content.
  • Store the banana bites in an airtight container in the freezer for up to 2 weeks.
  • Let the bites sit at room temperature for a few minutes before enjoying for easier biting.
