Description

Fresh broccoli florets and crisp apple cubes tossed with chewy cranberries and nutty seeds, all coated in a creamy honey-lemon dressing. This chilled salad offers a playful crunch and a balanced sweet-tart flavor with every bite.

Ingredients

  • 2 cups broccoli florets
  • 1 cup diced apple
  • 1/4 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/3 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Trim broccoli stems and cut florets into bite-sized pieces.
  2. Core and dice the apple into pieces similar in size to the broccoli.
  3. In a small bowl, whisk together mayonnaise, honey, lemon juice, salt, and black pepper until smooth.
  4. In a large bowl, combine broccoli, apple, dried cranberries, and sunflower seeds.
  5. Pour the dressing over the salad and toss until all ingredients are evenly coated.
  6. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For extra crunch, substitute sunflower seeds with chopped walnuts.
  • Adjust the honey amount to control sweetness to your taste.
  • Prepare the salad up to a day ahead, but add seeds just before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
